Blueberry Cream Cheese French Toast Roll-ups

Start off your day with these easy to make French toast roll-ups – perfect for busy mornings as your family is getting ready for school. Add some variety to your mornings by swapping out the blueberries for your other favorite fruits or nuts.

Ingredients

  • 10 slices Soft bread
  • 10 Tbsp. Whipped cream cheese
  • 3/4 cup Blueberries
  • 3 Eggs
  • 1/2 cup Milk
  • 1 tsp. Vanilla extract
  • 2 Tbsp. Butter
  • 1/2 tsp. Cinnamon
  • 3 Tbsp. Sugar
  • Powdered sugar, optional
  • Topping: ½ cup Maple syrup
  • Topping: ½ cup Blueberries

Directions

1.)

Cut all four sides of crust off bread. Flatten out each slice using a rolling pin and set aside.

2.)

Add a dollop of cream cheese to a slice of bread and spread out across the bread. Line the edge with blueberries.

3.)

Starting with the edge with the blueberries, roll and seal the bread.

4.)

In a bowl, whisk together eggs, milk, and vanilla.

Melt butter in NUCU’s 11 inch nonstick fry pan on medium heat.

6.)

Gently turn each bread roll in egg mix to coat and let any excess run off. Place in the warm fry pan with the seal side down. Allow to cook for a few minutes, turning to lightly brown each side. Remove from pan and set aside.

7.)

Mix together cinnamon and sugar on a plate. Turn roll-ups in the sugar mix to coat.

8.)

To make the topping, lightly mash ½ cup blueberries with a fork. Add blueberries and syrup to your fry pan over medium-low heat. Allow to heat through while stirring, about 1 to 2 minutes.

9.)

Sprinkle powdered sugar over roll-ups. Pour syrup topping over roll-ups and serve immediately.
