These roasted carrots are easy to make and packed with flavor. Fresh carrots and onions are simply tossed with honey, mustard, balsamic vinegar and oil and are ready to bake!
Ingredients
- 1 pound Carrots, peeled
- 2 Tbsp. Vegetable oil
- 1 Tbsp. Honey
- 1/2 Tbsp. Grainy mustard
- 1/2 Tbsp. Dijon mustard
- 2 Tbsp. Balsamic vinegar
- 1 Red onion, sliced thin
- 1 Tbsp. Fresh dill, chopped
- Salt and pepper, to taste
Directions
Preheat oven to 400 degrees.
In a small bowl, whisk together the vegetable oil, honey, both mustards, and balsamic vinegar.
Add carrots and onion to mixture and toss to coat.
Place carrots on a NUCU medium baking sheet.
Place carrots in preheated oven and roast for 30 – 40 minutes, turning halfway through. Cook until carrots are fork-tender and golden brown. Baking time will vary depending on size of carrots.
Season with fresh dill, salt and pepper. Serve immediately.
